Egg Roll

Egg Roll-up - serves 8-10

1/4 C. butter

1/4 C flour

12 eggs

1 C cottage cheese

1/3 C. milk

1 teaspoon salt

1/4 tsp. onion pwd and garlic pwd.

In a large glass bowl melt the butter in the microwave. Then whisk together the remaining ingredients. Line a 10" x 15" jelly roll pan with parchment paper (that comes out over the edges), grease it and pour the egg mixture into it. Bake at 350 for 20 min. or until set but not brown.

Filling:

1 pound pork sausage or bacon

1/4 C. medium salsa

2 C. shredded cheese (cheddar or other)

Brown sausage, drain and crumble. When eggs are done immediately spread the salsa from edge to edge, sprinkle on the sausage and then the cheese. Roll up from the short side, using the parchment paper to lift and roll. It's hot! Place the egg roll on a serving dish. Garnish with more salsa and cheese. Let stand  several minutes to melt the cheese. Cut in 3/4 " slices and serve.

Filling can also be vegetarian:

Saute any combination of veggies: onions, peppers, mushrooms, broccoli, asparagus, or spinach. Drain well so the egg roll doesn't get watery.

Other meat and cheese combinations are also great.
